Dominika Coose

Assistant General Manager + Wine Director

Born in Poland, Dominika was raised in South Brooklyn (not too far from Gage & Tollner!) where she moved at the young age of six. She grew up in a traditional Polish household filled with homemade pierogies and stuffed cabbage, but became enthralled with the hospitality world as soon as she was old enough to dine out on her own. She worked in a restaurant while attending college in Manhattan, and accepted a management position upon graduation which unknowingly also included beverage decisions. Dominika began studying wine, cocktails and beer and fell in love with a whole new side of the industry. Her passion paved the way for her success, and she quickly went on to hold sommelier positions at some of the most prestigious restaurants in the city, including Marta, TAK Room, The Riddler, Niche Niche, and Mel’s. Dominika joined the team at Gage & Tollner as Assistant General Manager in January 2023, and took on the role of Wine Director in May 2024. When she’s not at work, you can find her walking Greenwood Cemetery and Prospect Park with her husband, Cory, rewatching the timeless Scream franchise, or out roller-skating.
